Tannase is mainly prepared by Aspergillus and other microbial fermentation.The ester bonds and depside bonds in Tannin can be thydrolysis by tannase and combinat important industrial material gallic acidsand other compounds.Tannase has been widely applied in such areas as food and beverages,cosmetics and feed industries.The article reviews on the new developments about tannase-producing strains breeding,medium for fermentation system,fermentation production extraction and purification,immobilized enzyme technology of tannase,et al.and the development trend of researches on tannase preparation.
