Amongst a range of solid stabilizers, cellulosic micro/nanoparticles sourced from agriculture and forestry have emerged as promising contenders for achieving effective Pickering stabilization owing to their distinctive morphological features and adjustable surface properties. This paper summarizes the latest advancements in formulating and stabilizing Pickering multiphase systems utilizing cellulosic colloidal particles, encompassing an analysis of key factors influencing interfacial assembly along with suitable preparation techniques for generating stable Pickering emulsions.
