Three types of rice,including germinated brown rice,ordinary brown rice and milled rice,were used as raw material. Bioactive polypeptides were exacted from the three types of rice by means of enzymatic preparation. Total reducing power,hydroxyl radical scavenging activity and 2,2 '-azino-bis( 3-ethylbenzothiazoline-6-sulphonic acid)( ABTS) radical scavenging activity of exacted polypeptides were evaluated,and the content of polypeptides in rice was detected in our experiments. The results indicated that the content of polypeptides in germinated brown rice was higher than that in ordinary brown rice and milled rice,the lowest content of polypeptides was observed in milled rice. Experimental data showed the antioxidant activity of exacted polypeptides in germinated brown rice was stronger than that in ordinary brown rice and milled rice. In summary,our study provides the basis for the function development of germinated brown rice.
