Preparation and antioxidant activity of walnut oil microemulsion

We prepared O/W walnut oil microemulsion with walnut oil and isoamyl acetate(1:1,w/w) as oil phase,EL-35 and Tween 80(8:2,w/w) as surfactant phase.The O/W microemulsion was remarkably stable from 25 ℃ to 60 ℃.The diameter of O/W microemulsion droplet increases with the increase of walnut oil content.Rheological study shows that microemulsion sample is pseudoplastic fluid with shear thinning behavior.Walnut oil microemulsion has obvious scavenging activity to O-2,and IC50 value is 0.090 3 mg/mL.
