Protein is essential for growth and maintenance of the human body. Furthermore, proteins impart various beneficial functional properties. Protein is often added to foods in the form of protein ingredients. The demand for these protein ingredients continues to rise. Enzymes are incredibly useful tools that can be used to make exquisite modifications to food proteins and protein ingredients to further enhance their functionality and nutritional value. This chapter serves to demonstrate the valuable role that enzymes can play in the modification of such proteins and provides examples of innovative enzyme developments to meet specific market and consumer needs.
