In order to investigate bioactivity of soluble polysaccharide from plantain,hot water extraction and ethanol deposit were adopted.The influences of four factors affecting soluble polysaccharide extraction,such as extraction temperature,extraction time,extraction times and material-water ratio were studied.Single factor experiments(SFE) indicated that extraction of plantain soluble polysaccharide can be extracted preferably under these conditions of 80℃,120min,material-water ratio of 1:20,extraction for 2 times.Optimized formula was 90min,80℃ and material-water ratio of 1:25 and soluble polysaccharide extracted was 0.2988 g/10g.And meanwhile,capacity of scavenging ·OH and O2-·free radical in vitro of soluble polysaccharide from plantain was investigated,results showed that the relationships between soluble polysaccharide and scavenging ability to ·OH and O2-· free radical in vitro were linear and could be described as y=5.48x+31.34(r=0.9823) and y=4.334x+ 34.134(r=0.9979) respectively.In addition,IC·OH-50% and ICO2-·-50% were 114.57ug/ml-1,172.85ug/ml-1 respectively,which elucidates soluble polysaccharide from plantain can scavenge ·OH and O2-·free radical commendably.
