摘要
In this chapter, the importance of self-assembled soft systems based on surfactants and polymers including emulsions and hydrogels in encapsulation, protection, and release of nutraceuticals relevant for the development of functional foods have been highlighted. Such self-assemblies hold a significant place in the development of food and beverage formulations owing to their biocompatibility, easy mode of preparation, cost-effectiveness, and stimuli-responsiveness for achieving effective encapsulation and controlled release of nutraceuticals. A comprehensive account has been provided from the vast body of literature related to the variety of self-assemblies of surfactants and polymers that are commonly used to encapsulate, protect, and release nutraceuticals in the food formulations. Significant attention has been devoted to the current status of the work that is being carried out in this research field with emphasis on improvements demanded to meet the requirements of the food industries.
