Litchi pericarp was used to study the effect of temperature of drying(25℃,45℃ and 105℃)on estimates of condensed tannin(CT).These estimates were also made on freeze-dried samples.We made comparison of condensed tannin between Litchi chinensis cv wuye and Litchi chinensis cv lanzhu.Correlations were made between these variables.According with results,a significant differences(p0.01)occurred between the drying methods for condensed tannin.The responses of tannin to the altered temperature of drying(25℃,45℃ and 105℃) were that higher temperature resulted in lower tannin concentration of pericarp,decreased by 37.09%,63.75% and 85.47%.However,there was insignificant differences(p=0.562) between freeze-dried samples and fresh samples.The experiments for comparing condensed tannin,between wuye and lanzhu,showed that tannin content of wuye was higher than lanzhu.According with results,freeze-drying proved to be best for preserving the characteristics of the sample.
