Comparation with Nutritional Components of Pleurotus ostreatus Culturated by Walnut Shell and by Sawdust

The nutritional components and mineral elements of Pleurotus ostreatus culturated by Walnut shell(patent application) and by sawdust were determined.Comparing these data,the results indicated that the protein of Pleurotus ostreatus culturated by Walnut shell was relatively lower than by sawdust,the difference between them was 4.5%,and crude fiber,polysaccharide were higher than by sawdust,the difference between them was 13.8% and 3.64% separately.The results also showed that the mineral elements of Pleurotus ostreatus culturated by walnut shell were higher than by sawdust,espicially the contents of iron and zinc,the contents of iron and zinc culturated by walnut shell were 32.3 mg·kg-1and 36.3 mg·kg-1 separately than that by sawdust.
