Study on Antimicrobial Activity of Water-Soluble Yeast Glucan

The antimicrobial effects of water-soluble yeast glucan(WSYG) against bacteria,yeast and mould were studied.The results showed that water-soluble yeast glucan could effectively inhibit the growth of bacteria and the minimum inhibitory concentration(MIC) for different bacteria were Escherichia.Coli 20 mg/mL,Salmonella sp.20 mg/mL,Bacillus.subtilus 10 mg/mL,and Staphalococcus aureus 10 mg/mL,however,it could not inhibit mould and yeast.The optimum pH value for antimicrobial activity of WSYG was 6.0～7.0.Water-soluble yeast glucan had better antimicrobial effects under higher temperature.
