This aiticle studied the impact of sugars, reducing agents, SDS, CMC-Na, lipids and other things on film properties of soybean protein isolate. The results show that the chitosan can improve the protein film mechanical properties, when the dosage was 0.3 g/(5 g protein), the tensile strength increased 79.44% than the control group, meantime the protein can keep good organoleptic properties; Lipids can reduce the water vapor permeability(WVP), when the dosage of stearic acid was 0.4 g/(5 g protein), the WVP can be reduced by 26.76%, and protein film formation is better.
