In summary, moderate oil refining in Chinese industries has the potential to produce good-quality edible oils that better retain naturally occurring nutrients and minimize
manufacturing hazards. Conventional lipid processing may well gradually be replaced by moderate refining in the near future. Major technical challenges in moderate refining are the variation of naturally occurring nutrients in different edible oils, and the regulation of processing or refining impacts on the nutrients accordingly. The equipment for moderate refining and the utilization of by-products are also the areas deserving special attention.
