Herein, we proffer some exciting material breakthroughs and discoveries in ferroelectric perovskite-based optical devices in this chapter that are relentlessly shaping the electro-optic canvas. In our opinion, the corresponding interplay between ferroelectrics and optics is more than just a foundational scientific research curiosity about materials; they are also influential driving factors behind the development of innovative optoelectronic systems. In terms of polarization reversal, field-induced strain behavior, and phase transitions, we discuss the various forms of electro-optic processes associated with polarization. The prevalent and modern transparent electro-optic perovskites are looked upon with a focus on their key characteristics and features, which is markedly absent in the available scientific literature. Different ferroelectric perovskite systems in bulk ceramics, thin films, single crystals, and heterostructures that are canonical as optical switches, modulators, and memory devices are comprehensively investigated. Finally, we conclude with insights and perspectives into the future possibilities and directions of this exciting field.
