Study on Bienzymatic Hydrolysis of Crasostrea gigas Protein and the Antioxidant Activities of Hydrolysate

摘要
The Crasostrea gigas protein was hydrolyzed by trypsin(PTN) and neutrease.The effects of hydrolysis time,pH and UNeutrease∶UPTN(UN∶UP) on hydrolysis degree were optimized by orthogonal design based on single factor tests.The reducing ability and DPPH free radical scavenging activity of the enzymatic hydrolysate were determined.The results showed that the optimum extraction conditions were determined as 3 h of hydrolysis time,pH 7,UN∶UP=1∶3.The degree of hydrolysis was 27.09%.The enzymatic hydrolysate was with reducing capability and strong DPPH free radical scavenging activity.
