Allergen risk management in the US and Canada involves a complex interaction of national and local authorities and regulations. The primary focus at the national level in both countries is on the labeling of packaged food and on the use of Good Manufacturing Practice to avoid cross contact. At the state and provincial level, the primary focus is on providing information and preventing cross contact in restaurants, delis, and other food service settings.
