Evaluation and determination of conditionons gelatin hydrolysis by two protease

Gelatin hydrolysis by samples of neutral protease and trysin had experimented, ability of two kinds of protease have analyzed. The hydrolyzing conditions of two kinds of protease was determined, such as tempera-ture of reaction, pH value、substrate concentration、amount of protease and time of hydrolysis.
