Antioxidant Activity of Polysaccharides from Flammulina velutipes

Using tea polyphenol and VCas the control,the effect of Flammulina velutipes polysaccharides on scavenging ·OH and O2-·was studied with Fenton reaction and pyrogallol autoxidation methods.The results showed that Flammulina velutipes polysaccharides had certain ability to scavenge ·OH and O2-·;with various concentrations.When concentrations were the same,Flammulina velutipes polysaccharides had stronger ability than tea polyphenol and VCto scavenge O2-·and·OH.In addition,the oil and oxidation of Flammulina velutipes polysaccharides was studied.The results showed that Flammulina velutipes polysaccharides had certain ability on anti-oxidation of oil.
