Study on the Technology of Preparing Low-ester Pectin by Amidation Method

The pectin,which is a main active ingredients of apple pomace.The technology of preparing the low methoxyl pectin(LMP) from high methoxyl apple pectin(HMP) with amidation method was studied.Taking the yield of LMP as target,the influential factors such as the quantity of liquid ammonia,the temperature and reaction time were studied through single factor experiments.Under these conditions,the optimum conditions of de-esterifi-cation were determined through orthogonal test at last.
