Advanced research on the application and mechanisms of natural food preservatives

This paper describes the latest progress in natural food preservatives,focusing on the development trends of natural food preservatives extracting from plants,their resources of plants,antibacterial actions and application.The relationship between their active components and antibacterial effect,mechanisms of antimicrobial action of natural preservatives was mentioned,with an aim to provide a reference for researches on non-toxic natural food preservatives with broad antibacterial spectrum and high activity.
