STUDY ON PREPARATION OF SOLUBLE PEPTIDES BY ENZYMOLYSIS OF MALT PROTEIN

The research on the technology of producing polypeptide from malt protein via enzymolysis with alcalase. By single factor experiment and orthogonal experiment,The optimum enzymatic hydrolysis conditions were determined:the enzymatic hydrolysis pH10,The amount of enzyme added 3500 u/g,the enzymatic hydrolysis temperature 50 ℃ and hydrolysis time 20 min. At the optimum conditions,the malt protein DH can be 22. 18% ,and NSI can be 23. 68%.
