Effect comparison of frozen storage on texture properties between silver carp and carp fish muscles

Compared the effect of frozen Storage on the textural properties of silver carp and carp fish muscles. The texture analyzer was applied to analyze the silver carp and carp fish muscle, and the indexes were compared with the un-frozen ones'. The results showed that after 15 day-frozen storage, all the indicators such as hardness, springiness, adhesiveness, gumminess and resilience decreased, but the degrees were different. Comparing the carp fish muscle, the texture of silver carp fish muscle was more obvious.
