Studies on the aroma constituents of Biluochun green tea

The chemical composition of volatiles of Biluochun tea was analyzed with gas chromatography and gas chromatography-mass spectrometry. The results showed that the main volatile constituents of Biluochun tea were hexanal, nonanal, linalool, geraniol, cis-jasmone and 6,10,14-trimethyl-2-pentadecanone, etc. Whereas the concentrations of (Z)-3-hexenol, linalool oxides, methyl salicylate and β-ionone were very low, which were commonly identified in green tea aroma. The apparent characteristic of the aroma of Biluochun Tea was high concentrations of hexanal and nonanal, besides linalool and geraniol. It was also compared with that of Longjing Tea.
