Study on effect of ozone-water and low-temperature treatment on preservation of Ruditapes philippinarum

In order to prolong the shelf-life of Ruditapes philippinarum,the preservation effect of ozone-water on Ruditapes philippinarum was studied in this paper.The fresh Ruditapes philippinarum was treated with ozone-water at the content of 1.8,3.0,6.0 mg/L and for 5,10 min and 15 min,respectively.After maintained at 4 ℃,the sensory,pH,total number of bacteria and content of volatile basic nitrogen(TVB-N) were detected to evaluate the quality change during storage of Ruditapes philippinarum.Results showed that the ozone-water has significant bactericidal and fresh-keeping effect on Ruditapes philippinarum.The quality was improved asthe ozone content was higher and treated time was longer.For Ruditapes philippinarum treated with 6.0 mg/Lof ozone-water for 15 min,its disinfection rate was up to 92.0%,and bacteria total number and the TVB-Nvalue were 1.05×106 cfu/g and 19.78 mg/100 g after 6 days of storage,which lengthened 3 d of the shelf lifecompared to control group.The results of this paper indicated that the ozone-water has application potential topreservation of Ruditapes philippinarum
