Effect of amylose starch to the formation of resistant starch

The formation of resistant starch from different kinds of high-amylose starch was investigated.The result show that the more amylose it has,the more resistant starch it can produce,the highest yield can reach to 20.74%,normal starch can produce 9.09% resistant starch.
