Reason for Higher Concentration of Ethyl Lactate in Fen flavor Liquor and its Solving Measurements

The higher concentration of ethyl lactate in the base liquor of Fen flavor liquor is common in production due to the problems in koji,distillation and sanitary which cause the disorder of ethyl acetate and ethyl lactate.In this paper,the reason and solving methods for higher concentration of ethyl lactate were investigated.
