Abstract Trans-2-hexenal is a naturally occurring volatile phytochemical with antimicrobial activity. It has not been widely used for the preservation of fruit and vegetables owing to its rapid volatilization. In this study, β-cyclodextrin-trans-2-hexenal microcapsules (β-CTHM) were prepared using the saturated aqueous solution method and their efficacy in preserving pears was evaluated. Results from scanning electron microscopy, thermogravimetric analysis, and Fourier-transform infrared spectroscopy indicated that β-CTHM was successfully prepared with an encapsulation efficiency of 67.52 %. The release of trans-2-hexenal from the microcapsules was dependent on the storage temperature. β-CTHM significantly inhibited the mycelial growth of Alternaria alternata in vitro. Furthermore, β-CTHM at 0.4 g/L fumigation treatment inhibited black rot of ‘Zaosu’ pears, maintained fruit firmness and titratable acidity, and reduced the respiration rate. Our present study suggested that β-CTHM might be used as an alternative to other preservative methods in retaining postharvest fruit quality.
