Proteolysis in alfalfa silage and its inhibiting method

The proteolysis in alfalfa silage is quiet severe.In this paper,the mechanism of proteolysis and its affecting factors in alfalfa silage were expounded in detail with effects of some proteolysis additives.Meanwhile,the present research and problems needed to be solved in the posterior research were also brought forward so that all of these could offer some references for domestic proteolysis research work.
