Antioxidant activities of beef essence

The antioxidant activities of the beef essence were studied in NBT, DPPH, ABTS reaction systems. Moreover, the changes of antioxidant activity of the essence under specific conditions were examined. The results showed that beef essence has antioxidant effects in the DPPH system. It processes a certain effect on scavenging the superoxide radicals in NBT system. But the antioxidant activity of beef essence was not obvious in the ABTS system. The antioxidant of the essence under particular conditions showed that antioxidant activity of the essence was increased at 100 ℃. The antioxidant activity of the essence in pepsin digest situations was also increased.
