摘要
The current biotechnological tools allow us to intervene on important food preservation issues. The use of these tools has proven to have significantly contributed to minimizing food deterioration, especially those belonging to the perishable food category. The science of nano-preservatives is rapidly expanding to address problems related to food preservation. Food alterations can occur throughout the supply food chain, so nano-preservatives could help prevent quality deterioration. The purpose of this chapter is to emphasize the role of nanobiotechnology in food preservation and to summarize some recent advances in the use of nano-preservatives used for food preservation as well as the molecular perspective making the way of acting of the main nanomaterials more understandable by identifying the factors that contribute to their development.
