摘要
Low-field time-domain nuclear magnetic resonance (TD-NMR) relaxometry has become more popular in food industry due to its nondestructive, time-saving, and less-laborious nature. It takes also an important place in dairy science and dairy industry since it provides the researchers a quick, easy, and solvent-free method to monitor the shelf life of dairy products. This chapter aims to inform researchers with no prior knowledge on the fundamentals and applications of TD-NMR in dairy science. It also aims to enlighten readers about the fundamentals of TD-NMR method and its possible application areas in the analysis of dairy products.
