Recent Advance in Research and Application of Several Glycosyltransferases in the Synthesis of Functional Oligosaccharides

Isomaltooligosacharide,fructooligosaccharides,fucosylated oligosaccharide and sialyloligosaccharide have been widely applied in milk powder for infants and young children because of its special physiological effect to promote the growth of bifidobacterium.These functional oligosaccharides are produced by α-glycosyltransferase,fructosyltransferase,fucosyltransferase and sialyltransferase,using glucose,sucrose and lactose as substrates,respectively.This paper reviews recent research advances in the microbial souces,properties,activity and expression of these enzymes and their applications in the synthesis of functional oligosaccharides in order to provide refereces for the development of highly active glycosyltransferases and the improvement of their applicability for the production of functional oligosaccharides.
