摘要
Inulin is categorized as a soluble dietary fiber and serves as a prebiotic. It offers numerous health advantages, such as enhancing intestinal health. Recently, many researchers have given much attention to the functions and applications of inulin. However, these studies do not extensively demonstrate the functions and applications of inulin in combination with other components. Therefore, this paper comprehensively reviews how inulin interacts with other molecules, such as proteins, starch polysaccharide, and polyphenols. It also highlights the importance of these interactions in improving food flavor and texture, as well as in the development of biological films. Moreover, it examines the structure, physical, and chemical characteristics of inulin, as well as its biological effects. Overall, inulin, serving as a multifunctional bioactive agent, shows considerable potential for application across various domains. This review ultimately offers valuable insights into the development and use of inulin.
