Fruit and Vegetable Juices and Related Products

Fruit juices were developed originally because of surplus fruit production. Although this is still the case, in some areas about 60 per cent of commercial fruit juice is now made from fruit specially grown for the purpose. In 1980 the world production of fruit juice was over 5000 million litres of which about 25 percent was in the form of concentrates. Citrus juices dominate the market, although pineapple, apple and unfermented grape juices form a large and increasing part.
