Research on the stability mechanism of liquid milk by Zeta potential

The electric double layer model of colloid,the concept and measure principle of Zeta potential,the relationship between DLVO theory and the stability of colloid,and the application of Zeta potential in the research on the stability of liquid milk and its prospect are introduced in this paper.
