Determination of amino acid content in products by spectrophotometric method

Determination of amino acid content in products by spectrophotometric method was investigated in this paper.In this method,blue-violet compound formed through reaction between amido and nihydrin hydrate can be detected at 570nm wavelength,and its content is proportional to the peak area.This method is easy to use,sensitive,and saving time.Its average recovery is 98.4%,and relative standard deviation(RSD) is 1.0%.These technical indicators showed this method can be adopted to supervise and examine the amino aicd content of food(health products).
