Preparation and Properties of the Corn Oxidized Starch

The optimum oxidation condition of corn starch determined by using the orthogonal design method were as follows: reaction time 4 h, temperature 45 ℃ , pH 9, quantity of oxidizer (hypochlorite)15ml. The properties of the product were also discussed. The result showed that the product had good fluidity and coating ability. So the product has good application potentiality in food industry.
