Study on the Preparation Method of Quercetin

Objective:To select effeciency method for preparaing quercetin.Methods:To extract rutin by water directly, hydrolyzing with acid to get quercetin and ditermine its structure by means of NMR.Results:The content of prepared quercetin was more than 97%.Conclusion:To extract rutin by water and then to hydrolyze with acid can produce pure quercetin.
