摘要
This chapter presents a scenario about the microbial production of bioactive peptides. To obtain these bioactive peptides, protein matrices of different origins are used, in addition to complex culture media and proteolytic microorganisms, mainly lactic acid bacteria. It stands out as a promising scenario, the production of recombinant bioactive peptides in microbial expression systems, favoring the productivity in these bioprocesses with less environmental impact. There is a need to improve the studies on scaling up the microbial production of bioactive peptides for large-scale production, aiming to establish appropriate strategies to adapt the steps of isolation, concentration, and purification of fermentation processes for a feasible industrial production and increased productivity of microbial bioactive peptides.
