Screening of aspartame synthesizing strains

In order to grope for the new idea and new approach of aspartame synthesis,strains for hydrolyzing aspartame were screened from soil.Based on the protease catalyse reverse reaction,L-aspartic acid(ZA) and L-phenylalanine methyl ester were catalyzed by the protease for synthesis.Results showed that there was some aspartame to be produced through the HPLC.By single factor experiments,the influences on the enzymatic activity,such as reaction time,temperature and pH,were investigated.
