Comparation on the effect of different essential oils on the antioxidant of the regulate pork

The antioxidation activity of garlic essential oil,clove essential oil and cinnamon essential oil on the regulated pork were evaluated by monitoring the sensory evaluation,acid value and TBA value.The result showed that each of the three oils exhibit antioxidant activity on the regulated pork,and the order of the antioxidation activity is cinnamon essential oilgarlic essential oilcolve essential oil. The best concentration of cinnamon essential oil is 0.05%,garlic essential oil is 0.09% and clove essential oil is 0.05%.
