The article studied the water extraction condition for polysaccharide from cedar pine needles. Single- factor experiment (extraction temperature, material to water ratio, extraction time and pH) and orthogonal experimentL9(3)4were designed to optimize the extraction condition. The results showed that the optimum condition for extraction were: extraction time was 4 h, material to water ratio was 1∶30, extraction temperature was 90 ℃, and at a pH of 6.0, under this condition, the recovery rate was 4.907 %. And the results of ANOVA for L(934) orthogonal experiment showed that the optimum condition was the combination of A3B3C3D1(extraction time was 4 h, material to water ratio was 1∶30, extraction temperature was 100 ℃,and at a pH of 6.0).
