Study on screening of fine strain of lactic acid bacteria

This paper system atically summarized the methods and standards of screening out lactic acid bacteria fine strain. It involved anti-stress characteristic, proper hydrolysis of protein and lactose, slime-producing strain, Nisin-liking strain, Gal * strain, citric acid strain, probiotic strain, lysogeny strain and anti-phage strain etc. Meanwhile, the various influencing factors on out standing biological character and proper condition to express the trait were clarified.
