Study and Application of Texture Analyzer in the Assessment for Fruits and Vegetables Texture

With high sensitive and objective result,texture analyzer has been used for physical property research and detection.At present,single texture parameters were tested at fruit and vegetable,by understanding and analysis the application of texture analyzer on fruit,proposed thea application of texture analyzer test method on fruit,and forcast and prospect the future direction of development.
