Casein is the mayor protein in milk, representing the 80% of total milk protein from food. It is used widely in the food industry, along with derivatives and isolates from milk. As it is showed in the European Directive 2007/68/CE, regarding the labelling of some food ingredients, Casein is a source of food allergies and must be excluded from the diet of susceptible individuals. Therefore, it is necessary to have available a quick and effective technique for the detection of this compound in food matrix. The ELISA SYSTEM Casein Residue ELISA is a rapid test which significantly reduces the time required to screen food products for the presence of Casein. The assay has been shown to detect Casein from several mammalian species as well as from Bovine milk. In this article, we will show some of the probes performed for the validation of the method.
