Antioxidant activity of polyphenolic compounds in lotus seed.

Using tea polyphenol and Vc as the control,the effect of lotus seed polyphenol on scavenging ·OH and O-·2 was studied with Fenton reaction and pyrogallol autoxidation methods.The results showed that lotus seed polyphenol had certain ability to scavenge ·OH and O-·2 with various concentrations.When concentrations were the same,lotus seed polyphenol had stronger ability than tea polyphenol and Vc to scavenge O-·2,but weaker ability to scavenge ·OH.In addition,the oil anti-oxidation of lotus seed polyphenol was studied.The results showed that lotus seed polyphenol had certain ability on anti-oxidation of oil.
