Research Progress and Application of the Soy Protein Modification

The components of soy protein and modified methods are summarized.The modified methods include physical modification,chemical modification,enzymic modification and composite modification.Moreover,the applications of modified soy protein in industry are introduced.At the present,the soy protein has a broad space for deveolpment because its overseas and home markets are not saturated.
