Bigels are a new class of formulations that are widely used in food and pharmaceutical applications. In this chapter, the evolution of the applications of bigels in the food sector has been analyzed by scientometric analysis. The chapter also deals with the different methods to formulate bigels and the properties of the different biopolymers used to develop bigels for food applications. The applications of the bigels for nutraceutical delivery have also been discussed in this chapter. In gist, it was found that the bigels have been used by many researchers for controlled delivery of nutraceuticals due to their ability to tailor the pharmacokinetic profiles and help achieve site-specific delivery of nutraceuticals.
