Effect of bi-proteases on hydrolysis efficiency of corn protein

Four kinds of proteases,which were neutrase,alcalase,protamex,flavourzyme,were applied for treatment on corn powder with high protein content substrate(24%).Effect of combination of two kinds of proteases on hydrolysis corn protein was evaluated.The result showed that,except for the combination of alcalase and protamex,addition order of the proteases significantly affected the efficacy of hydrolysis of protein,Efficiency of combination of protamex with other protease was comparable to combination of neutrase with other protease.Hydrolysis efficiency of combined pro-tease was better than that of application of single protease,especially combination of flavourzyme and alcalase increased the degree of hydrolysis and content of soluble protein in hydrolysate to 26.85% and 98.05mg/ml,respectively.
