The hydrolysis of lecithin in aqueous phase was studied. The optimum conditions of reaction were investigated by the response surface experiment. The optimum reaction condition were as follow: reaction temperature 51℃ reaction time 6 hours、phospholipase A1 dosage 3.6% 、pH value 5.0、substract concentration 0.25 g/mL. The fatty acid compositions and contents of original and modified lecithin was analysed with high resolution capillary gas chromatography, the stearic acid of the lecithin was completely hydrolyzed, and the content of palmitic acid was decreased from 20.2% to 5.1%.
