Research on extraction of SOD and alliinase from garlic by ammonium sulfate salting-out

To extract and preliminarily purify SOD and alliinase from garlic,desired saturation of ammonium sulfate in two-steps salting-out was settled by gradient sedimentation of extract according to enzyme activity and protein content.40% and 90% saturation was defined as the lower and upper point for two-step ammonium sulfate salting-out of the two enzymes.Conclusion showed that SOD and alliinase couldn be extracted and preliminarily purified through two-step salting-out.
